3 green onions, sliced
3 potatoes, peeled and cubed
1/2 cup chopped onion
3 slices bacon, sliced into 1/2 inch strips
1 (17 ounce) can sweet potatoes, drained
1 (15 ounce) can hot cooked corn kernels
1 small onion, chopped
1 teaspoon garlic salt
3 tablespoons dark brown sugar
2 tablespoons butter
1 cup crushed cornflakes cereal
salt and pepper to taste
Preheat oven to 450 degrees F (230 degrees C).
In a large bowl, toss together the green onions, potatoes and onion. Remove skins and cube into 1/2 inch cubes. Set aside.
Melt bacon in a large skillet. Cook over medium heat until crispy. Drain and crumble. Stir in the sweet potatoes, corn sugar, butter, cornflakes, salt and pepper. Stir. Heat over medium heat, stirring occasionally, until heated through. Spoon into pastry bag lined with serrated knife.
Bake for 20 minutes in the preheated oven. Toss to coat. Bake for 10 more minutes; spoon sauce over the whole casserole and add chicken or pork.
