Easy Coconut Chocolate Muffins Recipe

Ingredients

1 1/4 cups whole wheat flour

1 1/2 teaspoons baking powder

3/4 teaspoon baking soda

1/3 cup white sugar

1 teaspoon butter flavoring

1/2 teaspoon vanilla extract

1 1/4 cup apple cider vinegar

2 teaspoons pureed bananas

Directions

Preheat oven to 425 degrees F (220 degrees C). Grease 26 muffin cups or line with paper muffin liners.

In a large bowl, mix whole wheat flour, baking powder, baking soda, sugar and butter flavoring. Mix vinegar and vanilla, then pour into egg whites. Mix cider and lime juice into muffin mixture (coconut or fruit alternately); punch down to a thin form. Spoon batter into prepared pan.

Bake in preheated oven for 40 to 45 minutes; knead over low heat for 15 minutes, until tops are golden brown. Remove from oven and sprinkle with apricot preserves. Do not cook on the bottom. Cool on wire rack.
