1 1/2 cups all-purpose flour
1/2 cup packed brown sugar
1/2 cup shortening
1 teaspoon baking powder
1 teaspoon salt
1 1/2 teaspoons baking powder
1 cup butter, softened
1 egg
1 teaspoon vanilla extract
1 cup chopped walnuts
1 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
In a medium bowl, cream together 1/2 cup of the shortening until smooth. Stir in the brown sugar and the 1/2 cup brown sugar mixture and 1 egg. Combine the flour and brown sugar mixture, stir into the creamed mixture just until moist. Fold in the vanilla extract. Spoon batter into prepared muffin liners.
Bake in preheated oven for 12 to 15 minutes, or until a toothpick inserted into center comes out clean.
