Miniature Potato Muffins Recipe

Ingredients

1 1/2 cups all-purpose flour

1/2 cup packed brown sugar

1/2 cup shortening

1 teaspoon baking powder

1 teaspoon salt

1 1/2 teaspoons baking powder

1 cup butter, softened

1 egg

1 teaspoon vanilla extract

1 cup chopped walnuts

1 teaspoon vanilla extract

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.

In a medium bowl, cream together 1/2 cup of the shortening until smooth. Stir in the brown sugar and the 1/2 cup brown sugar mixture and 1 egg. Combine the flour and brown sugar mixture, stir into the creamed mixture just until moist. Fold in the vanilla extract. Spoon batter into prepared muffin liners.

Bake in preheated oven for 12 to 15 minutes, or until a toothpick inserted into center comes out clean.

If I could give more stars, I would! This recipe is by far the easiest combo of flavors and instructions I have ever read. I love it so simple but if you need some serious seasoning, I would suggest using dry ground red pepper flakes or simply omit the salt and increase your serving size to 3 onions. I have already made the recipe and placed it in the fridge hoping for the heck out of it but it is SO delicious! It would only pair well with bright red meats or vegetables.
