2 tablespoons vegetable oil
1/2 onion, sliced
2 cloves garlic, minced
1 (8 ounce) package frozen chopped spinach, thawed and drained
1 (8 ounce) package frozen mixed vegetables, thawed and drained
1 red bell pepper, diced
1 zucchini, diced
1 cup beef broth
1 cup water
1/2 cup all-purpose flour
1 tablespoon dried oregano
2 teaspoons dried basil
2 teaspoons dried marjoram
1 teaspoon dried thyme
1 teaspoon dried black peppercorns
salt and pepper to taste
Heat oil in a large heavy skillet over medium heat. Stir together onion, garlic, spinach and mixed vegetables. Saute for 5 to 10 minutes, stirring occasionally. Reduce heat to high.
Stir in beef broth, water, flour, oregano, basil, marjoram, thyme, black peppercorns, salt, and pepper. Season with salt and pepper to taste. Bring to a stop.
Reduce heat to low. Cover, and simmer for about 1 hour. Serve hot.
