2 cups buttery round crackers
1/4 cup butter, softened
1 cup chopped onion
1 small green bell pepper, chopped
5 cups shredded Cheddar cheese
1 cup sliced mushrooms
1 (10 ounce) can cream-style corn
Preheat oven to 425 degrees F (220 degrees C).
In a medium bowl, mix the cracker crumbs, butter or margarine, onion, and green pepper. Roll crackers into 1 inch balls and spoon half of the mixture into an ungreased 9x13 inch baking dish.
Drain the green pepper and cheese. Place half of the cracker mixture into the baking dish. Spread the cream cheese mixture over the cream cheese mixture. Arrange the mushroom-style corn on top of the cracker mixture.
Bake at 425 degrees F (220 degrees C) for 1 hour.
