Coconut Cream Cake Recipe

Ingredients

2 1/2 cups white sugar

3 eggs

2 teaspoons vanilla extract

1 cup vegetable oil

1 teaspoon baking powder

1 teaspoon vanilla extract

1 1/2 cups milk

1 1/2 cups milk

3 cups cream cheese

1 (9 inch) prepared chocolate cookie crumb crust

Directions

Preheat oven to 300 degrees F (140 degrees C). Grease and flour two 9- tube pans. Grease and flour two 9- tube pans. Make the filling: Combine sugar, eggs and vanilla in small saucepan with lemon juice, oil, cooking powder and vanilla extract. Bring mixture to a boil and cook 2 minutes or until mixture is thickened. Gradually add milk and milk; stir in oil.

Pour batter into prepared pans. Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool completely. Serve warm or cool completely.

I have a good amount of coconut soup going on, only it was kinda thin. I don't normally serve my guests lemon curd but sheres a nice variation!
