Roasted Chicken in Cream Recipe

Ingredients

1 pound chicken, peeled and deveined

1 onion, peeled and chopped

1 medium green bell pepper, chopped

1 medium red bell pepper, chopped

1 medium yellow bell pepper, chopped

1 medium onion, sliced into 1/2 inch strips

1 (8 ounce) can stewed tomatoes with juice

1/3 cup chopped black olives

Directions

Place chicken in a large pot with enough water to cover, and cover the water with a pot lid. Sprinkle with chopped onion and bell pepper. Place bell pepper and onion slices on the pot. Stir in tomatoes, olives, and wine. Cover the pot, and bring it to a boil.

Cover, and bring to a boil. Reduce heat to medium low, and simmer, stirring occasionally, for 30 minutes.

I followed the recipe exactly making substitutions and it was delicious. Unfortunately I used fresh green beans because I've been facing a shortage of them and this was the only way I found to get them. Also, I used tomatillos from a jar because I'm not a big fan of cilantro and didn't have cilantro leaves, but this was the closest thing to real cilantro I've ever had.
