1 tablespoon almond juice
1/2 cup vodka
2 tablespoons lemon zest
1/4 cup vodka
2 potatoes, peeled and cubed
1 cup chopped fresh parsley
1 cup milk
1 1/2 teaspoons grated lemon zest
1 dash vanilla extract
In a heavy saucepan, combine almond juice, vodka, lemon peel and lemon zest. Simmer over medium low heat for 5 to 10 minutes, stirring occasionally. Remove from heat and stir in lemon zest. Allow to cool.
In a large plastic measuring cup, combine potatoes, parsley, milk, lemon zest and vanilla. Stir thoroughly and pour mixture into glass serving dish. Splice strata in top of dish to allow steam to escape.
