2 tablespoons vegetable oil
1/2 pound ground beef
1 onion, diced
1/4 cup chopped green bell pepper
1 (16 ounce) can cream-style corn
1/2 cup water
1 (10 ounce) package frozen mixed sweet potato
2 (16 ounce) cans sliced pineapple, drained
1 (14.5 ounce) can tomato paste
1 (10 ounce) package instant pineapple pudding mix
1 (4 ounce) can sliced pineapple, drained
1 (8 ounce) package cream cheese, softened
Heat oil in a large saucepan over medium heat. Stir in the beef, onion, green pepper, and corn. Saute for about 20 minutes or until beef is browned.
Meanwhile, heat water and mix in cream cheese, pineapple, tomato paste, and pineapple. Mix until well blended. Spread mixture over meat/spinach mixture. Cover, reduce heat, and simmer for 30 minutes. Remove from heat.
Stir brown sugar mixture into the beef/green pepper mixture. Mix well and simmer for about 5 minutes or until sugar dissolves. Stir in the cream cheese mixture and pineapple. Pour over meat/spinach mixture.
Return meat/spinach mixture to heat and simmer for about 5 minutes or until mixture is heated through. Serve warm or cold.
