Spinach Soup III Recipe

Ingredients

1/2 cup butter

1/2 cup all-purpose flour

1 teaspoon salt

2 tablespoons white sugar

1/2 teaspoon pepper

1 teaspoon grated lemon zest

3 cloves garlic, crushed

1 1/2 teaspoons dried minced onion

2 tablespoons ketchup

1 1/2 tablespoons onion cooking spray

1 cup chopped fresh spinach

1 (6 ounce) package frozen mixed vegetables, thawed

1 (14 ounce) can tomato soup

1 cup shredded mozzarella cheese

1 (3 ounce) package instant Italian-style pizza sauce

1 (1 ounce) square unsweetened chocolate ice cream topping

Directions

In a large saucepan, combine the butter, flour, salt, sugar, pepper, lemon peel and garlic. Bring to a boil and reduce heat. Cover and simmer, stirring occasionally until desired consistency has been reached.

Add the ketchup, onion, tomatoes, mixed vegetables and spinach. Stir in the tomato soup and cook over low heat for about 3 minutes.

While the mixture is simmering, line a serving dish with foil and pour the cream mixture over the foil. Sprinkle the cheese over the top of the foil.

Return the foil to the saucepan. Stir in the chocolate ice cream topping. Serve immediately.

Went incredibly well with everybody else's recipes and specification. I used chestnuts ground to the finest grind possible ~20. I used allspice bitters and have added cardamom since I missed it~Pretty good, medium bodied dish. I'd make again.
