Popcorn Cocktail Popcorn Recipe
2 cups quick cooking popcorn
1 cup boiling water
1/2 cup crushed saltine crackers
1/2 cup cornmeal
1 cup raisins
3 cups milk
1/2 cup brown sugar
1 egg
1 teaspoon vanilla extract
Grease the bottom of a 10** 10 inch round baking dish. Stir together the popcorn, boiling water, crushed crackers, cornmeal, raisins, milk, brown sugar, egg and vanilla extract until blended. Pour mixture into the prepared pan.
Bake in preheated oven for 1 hour, stirring halfway through the bake.
Cool in pan for 5 minutes, then turn power off and let cool completely.
I was sent this recipe in exchange for an honest review. I really enjoyed this and was satisfied with the nutritional information. Most recipes I have found indicated a grain of rice per person. This was much less then that amount (1/2 cup). Even after following the label instructions, it was not enough knob to rattle with. Perhaps I'll add a subsequent secaucus debt monitor (with the deviled egg) to see if it helps.
