1 tablespoon olive oil
1 large onion, sliced
4 cups chicken broth
2 cups water
1 lemon, juiced
1 cup distilled white vinegar
1 cup cubed, cooked chicken breast meat
1/2 cup Italian-style salad dressing
1 (14 ounce) can whole peeled tomatoes, drained
1 (4 ounce) can tomato paste
1 cup shredded mozzarella cheese
Heat the olive oil and pour in the chicken broth and water. Mix well. Cover, remove pan and place in a sealed container. Let stand overnight.
Remove pan from refrigerator and place pan on grill. Heat the vinegar and sauce over medium heat. Mix in the chicken and browning sauce. Season with tomatoes and tomato paste.
Heat tortilla strips or bagel shaped pieces in microwave oven (I use Iron Chef) on HIGH microwave for about 2 minutes or until they are golden brown. Serve with shredded cheese.
