1 medium onion, diced
1 medium carrot, diced
1 medium carrot, diced
2 cloves garlic, minced
2 tablespoons vegetable oil
1 (14 ounce) can tomato-vegetable juice concentrate
1 (16 ounce) can whole kernel corn, drained
1 cup water
3 tablespoons brown sugar
1 (10 ounce) package instant French onion soup mix
1 tablespoon salt
1 (1 ounce) package dry onion soup mix
1 cup sliced sweet Italian sausage
Place onion, carrot, and garlic into a large pot over medium heat. Saute for about 10 minutes or until vegetables are tender. Stir in oil, tomatoes, corn, water, brown sugar, and onion soup mix. Gradually mix in the broth and water to cover, stirring occasionally. Cover, reduce heat to low, and simmer for 30 minutes. Stir in tomato soup mix and salt, and simmer for 5 minutes. Cover, reduce heat to medium, and simmer 1 hour.
Stir in the dry onion soup mix and salt. Reduce heat to low for 5 minutes.
Return mixture to a medium pot over medium heat, and bring to a boil. Boil for 5 minutes. Stir into soup salad, and simmer for 30 minutes. Remove from heat, and stir in sausage. Serve hot or cold.
