Chocolate Pistachio Cookies Recipe

Ingredients

3/4 cup butter, softened

2 cups brown sugar

2 eggs

2 teaspoons vanilla extract

1/2 teaspoon lemon zest

1 teaspoon salt

3 cups all-purpose flour

1 teaspoon baking powder

3/4 cup pistachio nuts

1 teaspoon white sugar for garnish

Directions

Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.

In a large bowl, cream together the butter, brown sugar and brown sugar until smooth. Beat in the eggs one at a time, then stir in the lemon zest and salt. Combine the flour, baking powder, pistachio nuts and sugar; blend thoroughly. Drop dough by teaspoonfuls onto the prepared cookie sheets, spacing 2 inches apart.

Bake for 7 to 8 minutes in the preheated oven. Allow cookies to cool slightly before removing from cookie sheets to wire racks to cool completely.

I was really pleased with this recipe. I used chicken broth and it came out great. I used canned Embasa brand salsa from Costco and it was very good. I will make this again.

I baked these for 30 minutes Straight up in the Oven and they turned out Average at best. The chocolate chips were flavourless and a Cloner said they tasted like chocolate eye candy. I will not make this again.

Well, here we are in our 4th year of trying this and we love it! My children and I (we insist we aren't looking at a 2nd serving) have all had this cookie and even my 15yr old daughter said it was something special. I theorized that given the choice between a chocolate cookie and a cookie which didn't raws, she'd take the chocolate cookie! I did exactly that and she had some very dark chocolate chips to serve over top of it. I just filled the cookies and let the melt begin! I don't know if the chocolate chip topping is simply evaporated milk, or if it is actually some sort of fancy chocolate topping! I finished baking these cookies and they were fantastic!!! I will most likely use this topping many times in the future! A wonderful recipe I discovered just within the past week. Thanks for sharing!

A complete and delicious recipe I would give it more than five stars if I could. I usually use butterscotch muffins , so I lost the roll in the making of these, butchered my way thru them and used the espresso powder to make tha sandwich, and sprinkled onion and butter on the top.
