2 tablespoons margarine
1 cup lime juice
1 cup pineapple juice
1/2 cup lemon juice
1 (6 ounce) can pineapple juice concentrate
2 tablespoons orange juice
1 (8 ounce) can crushed pineapple with juice
Preheat the oven to 400 degrees F (200 degrees C).
In a small bowl, mix margarine, lime juice, pineapple juice concentrate, orange juice and pineapple juice concentrate. Mix thoroughly. Pour into a shallow baking dish and sprinkle with crushed pineapple.
Bake in preheated oven until chicken is cooked through, about 15 minutes. Remove heat from oven and cover with aluminum foil. Let cool completely.
