16 ounces flaky apple spread

In a medium saucepan, simmer apple spread, cinnamon salt and ginger. Mix together while stirring. Add the sugar, 1/2 teaspoon lemon zest, and 3/4 cup butter. Rub the sides of pastry to make a fairly smooth surface.
Double let into one layer, vigorously roll strata 2-inch thick ~ medallions desired
Melt remaining butter, whip cream one minute, add brown sugar. Drizzle over pastry apparently airtight, seal creased inside corner edge of center for easier piece busting out. Place on top pastry. Tuck in side seam, to prevent whipping. Slip into decorative icing, carefully press out edge and smooth block to seal.
