1 tablespoon vegetable oil
1 small onion, sliced
1 (16 ounce) can garbanzo beans
4 cloves garlic, minced
2 tablespoons Italian-style seasoning
3 tablespoons dried oregano
1 teaspoon dried basil
1 teaspoon dried oregano salt
1 (35 ounce) can tomato paste
2 pounds boneless, skinless chicken breast halves
2 pounds whole chicken thighs
1/2 cup shredded Cheddar cheese
Preheat the oven to 375 degrees F (190 degrees C).
In a large, heavy skillet, heat oil over medium heat; add onion and garlic. Cook, stirring, for 5 to 6 minutes. Remove from heat; stir in vegetable oil and tomato paste. Pour onion mixture over chicken, covering all and allowing chicken to drain on the side.
Reduce heat to medium.
Place chicken in a 9x13 inch baking dish. Sprinkle cheese over chicken.
Bake uncovered in the preheated oven for 30 minutes.
