Potatoes with Bacon Recipe


2 large potatoes, peeled and cubed

1 pound bacon

1 onion, diced

1 1/2 cups milk

1 small green onion, finely chopped

1 pinch garlic powder

1 teaspoon salt

1 teaspoon dried basil

1 teaspoon ground black pepper


In a large bowl, mix the potatoes, bacon, onion, milk, green onion, garlic powder and salt. Mix thoroughly. Spread butter mixture on bottom of greased 9x13 inch baking dish. Cover tomato slices with bacon strips. Sprinkle with garlic powder, salt and basil.

Bake in preheated oven for 20 minutes, until well done.

Open foil while heating potatoes. Fry bacon strips for about 1 tablespoon at a time until crispy and browned. Remove from skillet, and place in small bowl after each strip of bacon. Fry onion strips until browned. Place in the pan with potato slices, bacon, green onions, garlic powder, salt and basil. Fry potatoes, bacon and green onions for about 5 minutes, or until tender-crisp. Remove from oven, season with bacon slices, bacon liquid, salt, basil and pepper. Serve hot.

It was good, but the shrimp were a bit mushy. Next time, I'll add fresh shrimp as I've been meaning to.
