Pecan Pie VII Recipe

Ingredients

1/2 cup butter

3/4 teaspoon salt

2/3 cup packed brown sugar

1 cup corn syrup

1 tablespoon lemon juice

1 (8 ounce) package cream cheese, softened

1 (3 ounce) package instant vanilla pudding mix

2 cups crumbled cream cheese

1 (8 ounce) container frozen whipped topping, thawed

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a large saucepan over medium heat, melt the butter and salt until completely dissolved. Mix in brown sugar, stirring until sugar becomes a whiter portion of the mixture. Stirring constantly, bring mixture to a simmer.

Pour mixture into a 9 inch pie crust. Spread cream cheese over cream cheese filling.

Fold whipped topping into cream cheese and pie filling.

Bake in preheated oven for 50 minutes or until toothpick inserted in center comes out clean. Cool completely before cutting into squares.
