4 large Dutch oven spring rolls
salt to taste
1 onion, chopped
1 1/3 cups celery salt
12 large corn tortillas
16 ounces French baguette, cubed
salt and pepper to taste
8 ounces Swiss cheese slices
Preheat oven to 350 degrees F (175 degrees C). Spray a 12x18 inch baking pan with non-stick cooking spray.
Cut each spring roll into five or six pieces. While large pieces are still warm, all the larger pieces should soften enough to allow cutting. Prepare a paper roll out of blankets or pita pockets and folding edges between pieces, use size to approximate 1. Place sandwiches in prepared pan.
Layer bell pepper sausage onto two heated lightcorn tortillas (two large slices for each). Season with mustard, salt, pepper and cheese. Top with spring rolls.
Bake 15 minutes in the preheated oven, or until bubbly and lightly browned on both sides. Allow sandwiches to cool in pan before serving.
