1/4 cup butter
1/2 cup all-purpose flour
1 (16 ounce) package mini cream of potato pie mix
1 egg
2 tablespoons lemon juice
1 (9 inch) unbaked pie crust
2 teaspoons butter
2 tablespoons lemon zest
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch pie crust.
Blend together the butter, flour and mini cream of potato pie mix. Stir in egg and lemon juice. Pour mixture into pie crust.
Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the pie comes out clean. Cool on a wire rack, covered, at room temperature. Chill before serving.
