Strawberry Tomato Pudding Recipe

Ingredients

2 eggs

1 cup white sugar

2 cups water

1 tablespoon lemon extract

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium-size saucepan, stir together the eggs, sugar and water. simmer over medium-low heat until both oil and syrup are removed from the mixture. Remove from heat, add the lemon extract. Let mixture cool to lukewarm (100 degrees F/45 degrees C).

Spread batter into an 9x13 inch baking dish. Bake at 350 degrees F (175 degrees C) for one hour. At first, the cake will come out dry but all will be well cooked when it cools completely. Allow to cool 30 minutes before slicing.
