2 tablespoons olive oil
1 (13 ounce) package Oat Bran Flax Seed Corn Bread
1/2 cup packed light brown sugar
1 egg
1 1/2 cups whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1 pinch ground nutmeg
1 cup sliced almonds
1 1/2 cups rolled oats
1 cup roasted espresso beans
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (8 ounce) loaf pans.
Heat the olive oil in a medium saucepan over medium heat. Stir in the brown sugar and egg until mixture is light, similar to a jelly. Slowly stir in the flour and baking powder, mixing thoroughly. Mix in the flour mixture, baking soda, baking powder, chopped nuts and almonds. Spread the mixture evenly into the prepared pans.
Place beans on top of the flour mixture, then slightly drizzle over the bread and other ingredients. Bake in preheated oven for 3 to 4 minutes, or until beans are tender and the loaf springs back when pulled from the loaf. For best results, stir in coffee and hot chocolate.
