Apple Maple Barcros Recipe

Ingredients

1/4 cup white sugar

1/4 cup butter

1 3/4 cups all-purpose flour

2 (15 ounce) cans apple pie filling

3/4 cup honey

2 teaspoons grated lemon zest

2 teaspoons vanilla extract

2 teaspoons melted butter, divided

Directions

Preheat oven to 350 degrees F (175 degrees C). Spread apple filling into the bottom of a 9x13 inch pan.

In a large bowl, cream together the sugar, butter, flour and 2 cans of apple pie filling. Beat in the honey one cup at a time until smooth. Stir in the lemon zest, lemon zest, 2 teaspoons lemon juice, vanilla extract and 1 cup chopped pitted dates. Mix until smooth. Spread over pie.

Bake apple for 45 to 50 minutes in the preheated oven. Remove pie from oven and allow to cool on a wire rack. Chill at least 3 hours before serving.

I made these for tea and they turned out perfectly.....very soft on the inside. I thought they were more like baked macadamia nuts.....maybe I should par boil them first before adding the apples?

I made these bars and they were so easy to make!!! I put the dry ingredients in my stand mixer first and then the batter for the cookies was placed in my refrigerator. Just before serving time, I let the cookies cool on the counter and then I used a small cookie scoop to drop onto a wire baking sheet. I didn't even bother with turning the tops, b/c there's not much point in them anyway. I did this because I didn't want my cookies to stick to the bottom of the pan and I didn't want them to dry out either. Sorry, you won't find a better bar cookie out there.
