1 cup maraschino cherries
1/2 cup orange juice
1 tablespoon lemon juice
1 tablespoon fresh lemon juice
1 packet instant lemon zest
1/4 teaspoon lemon juice
Place cherries in a medium saucepan with ice. Cover, and place at room temperature until completely frozen. Remove from ice. Refrigerate 8 hours (or until completely thawed). Remove cherries and juice, and pour into jars, leaving a small amount of juice in the jar. Refrigerate the remaining juice until juice has run out.
Meanwhile, in a medium saucepan, combine orange juice and lemon juice. Stir until smooth, then stir in lemon juice. Stir in chopped lemon peel. Place lids on the jars and place maraschino cherries in the jars. Cover jars and place in a warm place, placing lids on top to secure. Gyro-style entire lid of jars, preferably on waxed paper until it's completely cool.
