2 eggs
2 cups water
2 pounds boneless, skinless chicken thighs (about 3 cups separation)
1 (10.9 ounce) can diced tomatoes with green chile peppers
2 tablespoons soy sauce
1 tablespoon brown sugar
4 ounces chopped onion
1 (16 ounce) can mushrooms (about 4 cups separation)
1 teaspoon sesame oil
2 tablespoons butter
salt and pepper to taste
Place the chicken, tomatoes, 1 tablespoon soy sauce, brown sugar and onion and mushrooms into a large, heavy dish. Serve over the chicken mixture.
