Easy Whole Wheat Crock Pot Soup Recipe

Ingredients

1 (10 ounce) package frozen mixed vegetables

2 1/2 cups water

2 carrots, chopped

1 onion, chopped

1 large tomato, chopped

2 small tomatoes, chopped

1/2 cup olive oil

1 1/2 teaspoons white sugar

1 teaspoon salt

1 1/2 teaspoons white sugar for garnish

Directions

Place mixed vegetables in a large pot or large saucepan. Bring water to a boil. Cover pot and remove from heat. Add carrots, onion and tomato; cover and simmer over low heat for 1 to 1 1 1 hour. Stir in olive oil, sugar, salt and white sugar. Return pot to a boil and scrape up veggie mixture, stirring occasionally. Cover and simmer over low heat for 10 to 15 minutes. Stir in white sugar and sesame seeds. Return pot to a boil and add vegetable mixture. Stew over low heat for 5 minutes, stirring occasionally. Pour over vegetables; toss gently. Stir in rice. Serve over soup.

Really good and very easy to make. The crust was nice but not to sticky. Later needed to add some more salt but that was easy to do. My tortellini were quite dry I added 2 tbsp more water but not enough. I adjusted recipe accordingly.
