1 (10 ounce) package frozen mixed vegetables
2 1/2 cups water
2 carrots, chopped
1 onion, chopped
1 large tomato, chopped
2 small tomatoes, chopped
1/2 cup olive oil
1 1/2 teaspoons white sugar
1 teaspoon salt
1 1/2 teaspoons white sugar for garnish
Place mixed vegetables in a large pot or large saucepan. Bring water to a boil. Cover pot and remove from heat. Add carrots, onion and tomato; cover and simmer over low heat for 1 to 1 1 1 hour. Stir in olive oil, sugar, salt and white sugar. Return pot to a boil and scrape up veggie mixture, stirring occasionally. Cover and simmer over low heat for 10 to 15 minutes. Stir in white sugar and sesame seeds. Return pot to a boil and add vegetable mixture. Stew over low heat for 5 minutes, stirring occasionally. Pour over vegetables; toss gently. Stir in rice. Serve over soup.
