1/4 cup maple syrup
1/2 cup boiling water
1 egg
4 bananas, sliced
4 cups confectioners' sugar
2 teaspoons vanilla extract
1 cup chopped pecans
Preheat oven to 375 degrees F (190 degrees C). Grease and flour an 8x8 inch pan.
In a large bowl, combine maple syrup, water, egg, bananas and sugar. Mix well, but do not over mix.
Place one banana slice in the bottom of the prepared pan, and some pecans at the top. Spread pecans over banana slice.
Bake in the preheated oven for 50 minutes, or until a toothpick inserted near the center of the cake comes out clean. Cool cake in the pan for 10 minutes.
To make the frosting: In a large bowl, mix together the 2 cups confectioners' sugar, melted pecans, orange zest and citrus zest of 2 oranges. Press first onto the right side of the cake. Slice left side up and spread the icing over the cake.
I was born in India, but both parents are Chileans-- which means we're officially Chileans! This cake is wonderful. It's so sweet. And it's so simple. Just as good as the day I learned it.
