2 large eggs
1 3/4 cups water
1 1/2 cups milk
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 (1 ounce) square unsweetened chocolate
1 (8 ounce) can sliced fresh blueberries with juice
1/2 cup butter or margarine, melted, for dusting
Preheat the oven to 375 degrees F (190 degrees C). Grease and flour a 9 inch square pan. Sift together the flour, baking powder, baking soda, salt, blueberries and orange juice. Set aside.
In a large bowl, cream together the egg, water and milk until light and fluffy. Beat in flour mixture in 1/2 cup at a time, mixing well after each change. Mix in flour mixture after adding the blueberries and orange juice until well mixed. Beat in vanilla extract. Combine chocolate and blueberries and stir into egg mixture until well blended. Pour batter into prepared pan.
Bake in the preheated oven for 60 to 65 minutes, or until a toothpick inserted in the center of the cake comes out clean. Allow to cool completely, then frost the outside of the cake with chocolate frosting.
While the cake is baking, smelt butter in the microwave or over a large microwave bowl in order to soften yellow cake layers. Remove from microwave, fold in blueberries and orange juice. Spoon evenly over top of cooled cake.
