1 cup butter, melted
1/2 cup shredded Cheddar cheese
1/4 cup shredded Italian cheese
1 red onion, diced
1/4 cup chopped green bell pepper
6 large tomatoes, diced
1 medium red onion, diced
1 medium cucumber, diced
1 cup sliced mushrooms
In a medium bowl, cream together the butter and cheese. Mix in the Italian cheese. Stir in the red onion and green pepper.
Place tomatoes and cucumber into a medium bowl. Mix in the mushrooms and red onion. Pour cream over tomato mixture and toss to coat. Serve finished 12 to 15 minutes before serving; refrigerate for at least 4 hours before serving.
