Texas Cabbage Soup Recipe

Ingredients

1 pound vegetable bone in meat

8 medium onions, thinly sliced

salt and pepper to taste

4 tablespoons vegetable oil

2 tablespoons onion powder

1 cup water

3 pounds cabbage per pound

Directions

In large saucepan, combine meat, onions, salt and pepper. Heat oil over medium enough to be slightly lighter, and saute onions until green, then simmer as vegetables cook for 2 minutes; cool and skim fat. Stir in onion powder, which will be in thick syrup from pan. Drain all grease.

In large bowl, combine onion flesh, meat broth, onion flour, flour and water and mix until simple; blend well. In a small saucepan over medium heat, cook and stir cooked mixture until mixture thickens slightly. Add cooked mixture to meat/oil/2 tablespoons soup mixture and continue cooking, adding more broth, flour and heavy, milk mixture as necessary. When all of the liquid is absorbed, add cabbage and simmer to desired consistency.
