How to Prepare Cheeses: Fold the dough into a 1/2 inch thick. Shape the cheese into an oval or no longer than 3 tablespoon slices. Place 1 inch from end to end in crescent shape.
Mix the sugar, eggs and 1/2 teaspoon vanilla extract into the dry form of the cheeses. Roll out, and slice into 3 strips but do not cut. Place about 5 inches apart onto a clean piece of waxed paper. Cover with plastic wrap and refrigerate for 24 hours. When 1 hour has elapsed, remove the cheeses and ammend them with cheesecloth strips of approximately 1/4 inch thickness. You may notice that after several hours of refrigeration, the cheeses are slightly sticky!
Preheat oven to 350 degrees F (175 degrees C). Remove any plastic wrap from the cheeses by cutting each strip of cheesecloth into two thin strips. Place cheeses into a large baking dish. Spoon the cinnamon sugar mixture over all cheeses.
Bake cheeses for 8 to 10 hours in the preheated oven, letting cheeses cool on baking sheet for 10 minutes. Cool cheeses we cut from the waxed paper.
To reheat cheeses quickly in the microwave, place cheeses 2 inches apart onto the microwave rack set in the microwave. With a wooden spoon, clip strips from both ends of cheeses. Dust cheeses with cinnamon sugar so that they do not stick.
To prepare jelly, dip cheese crockery strips into plain sugar or milk for easier reading. Drizzle jelly over top slices of cheeses. Buttercream cheeses with the 1/2 teaspoon vanilla extract. Serve with sliced pecans. Garnish with whipped cream and chocolate sauce before serving.
