1 1/4 cups all-purpose flour
2 tablespoons Dijon mustard
2 teaspoons brown sugar
1 3/4 teaspoons baking powder
1/2 teaspoon Kosher salt
1 1/2 teaspoons ground cinnamon
10 small apples
1/2 cup plain yogurt
6 slices bacon
6 slices Swiss cheese
1 (16 ounce) container frozen whipped topping, thawed
Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 4x8 inch loaf pan.
In a large mixing bowl, combine flour, mustard, brown sugar, baking powder, salt, cinnamon and apples. Mix lightly with spoon, until combined. Spread mixture evenly over prepared loaf pan. Sprinkle with yogurt and spread evenly over apples.
Bake in preheated oven for about 4 hours, or until knife inserted in center comes out clean. Serve warm or cold.
