1 cup white sugar
2 1/2 teaspoons vegetable oil
1 pinch salt
2 eggs
1 1/2 teaspoons lemon extract
2 teaspoons lemon zest
1 1/8 cups rolled oats
1 teaspoon lemon zest
1 1/2 teaspoons lemon juice
1 cup brown sugar
1/2 cup milk
1/4 cup vegetable oil
Preheat oven to 400 degrees F (200 degrees C). Grease cookie sheet.
In a large bowl, stir together the sugar, oil, lemon extract, lemon zest and lemon juice. Mix well and set aside.
In a small bowl, mix together the brown sugar, milk and oil. Add to the creamed mixture and mix well. Drop by spoonfuls into the oat mixture. Drop oat mixture onto ungreased cookie sheet.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool completely on baking sheet before removing to a wire rack to cool completely.
