1 small onion, chopped
1 medium carrot, chopped
1 medium zucchini, chopped
1 medium head cabbage, shredded
2 large tomatoes, diced
1 (10 pound) can mushrooms, drained
2 eggs, beaten
1 (16 ounce) container frozen whipped topping, thawed
In a large bowl, combine onion, carrot, zucchini and cabbage. Transfer to a large resealable plastic bag. Secure with a fork and shape into 1 inch balls.
In a large saucepan, heat tomatoes and cook until soft, about 5 minutes. Transfer to a large bowl. Toss with cabbage mixture, tomatoes and mushrooms and toss again. With hands, roll in whipped topping. Transfer to serving bowl. Serve.
