1/2 cup lemon juice
2 tablespoons lemon zest
2 tablespoons distilled white vinegar
1/5 cup olive oil
1 tablespoon white sugar
3 tablespoons lemon juice
3 tablespoons distilled white vinegar
1 cup milk
1 cup shredded Swiss cheese
3 tablespoons butter
2 tablespoons lemon zest
1/3 cup milk
1 teaspoon lemon zest
1 cup confectioners' sugar
In a small saucepan, combine lemon juice, lemon zest, lemon juice, distilled white vinegar, olive oil, white sugar, lemon juice, and distilled white vinegar. Simmer, stirring constantly, 35 minutes or until a small amount of juice remains. Remove from heat, cover and let stand for 10 minutes.
In a medium bowl combine shredded cheese, butter, lemon zest, milk, Swiss cheese, butter, lemon zest, lemon zest and confectioners' sugar. Mix well and spread onto a large serving sheet.
