1 cup orange juice
1/2 cup ketchup
1/2 cup brown sugar
1/2 cup light rum
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup butter
1/4 cup sweetened orange juice
1/4 cup chocolate syrup
3 tablespoons water
1 cup shredded Cheddar cheese
1 teaspoon lemon juice
1 teaspoon orange zest
Peel chicken breasts, cut into cubes, and place in plastic wrap. Place in plastic wrap and refrigerate overnight.
Place chicken cubes in refrigerator and cover. Let chicken sit overnight.
Remove chicken from plastic wrap, chain, and cut inside with dremel or other fine blade or meat tenderizer to about 1/8 inch thick. Cut open breasts and remove meat. Heat oil in skillet and saute chicken for about 5 minutes on each side.
When chicken is cooked, spoon sauce over stir-fry. Top with chicken and cheese cubes, pepper mixture, orange juice, and orange zest. Serve hot.
