Anise Crust Recipe


2 1/2 pounds ground flounder

1 1/2 cups fresh anise butter

1 teaspoon salt

2 cloves garlic, minced

1 onion, thinly sliced

1 1/2 teaspoons dried currant and thyme

2 teaspoons dried marjoram

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon dried rosemary

1 (8 ounce) can evaporated milk

1 (16 ounce) can tomato soup

2 cups chopped green tomatoes


Preheat oven to 350 degrees F (175 degrees C). Grease and flour a medium baking dish (or a 9x9 inch baking dish) and set aside.

In a large bowl, mix together the flour, salt, garlic, onion, currant, thyme, marjoram, oregano, basil, rosemary, evaporated milk, tomato soup and green tomatoes. Mix all ingredients together, and pour mixture into prepared dish.

Bake uncovered in preheated oven for 1 hour. Reduce oven temperature to 350 degrees F (175 degrees C). Bake an additional 15 minutes, or until thickening and bubbly.
