Monte Cristo Sandwiches Recipe


1 pound ground beef

1 yellow squash, chopped

1 (3 ounce) package low-fat cottage cheese

1 (10.75 ounce) can condensed cream of mushroom soup

1 (8 ounce) container shredded Cheddar cheese


In a large skillet, de-fat the beef and saute the squash, cheese and soup in an even heat. Simmer for an additional 12 to 15 minutes, or until the squash is tender.
