Yogurt Pudding Recipe

Ingredients

4 1/2 cups yogurt

1 cup chopped fresh onion

1 cup chopped green bell pepper

3 cups sliced fresh strawberries

1 cup sliced almonds

1 cup sliced pimento peppers

1 cup chopped walnuts

1 cup shredded mozzarella cheese

1 cup plain nonfat yogurt

Directions

In a large bowl, stir together yogurt, onion, green pepper, strawberries, almonds, pimento peppers, cheese and yogurt until smooth. Cover and refrigerate overnight.

Preheat oven to 350 degrees F (175 degrees C).

Move a casting iron skillet on to a warming rack. Place plate in center of a roasting pan. Place roasting pan on roasting pan lid so that it is 4 inches from the bottom. Place roasting pan on rack in oven. Pour 1/2 cup of yogurt mixture into roasting pan, and pour with remaining marinade.

Roast in preheated oven for about 45 minutes, stirring occasionally, until a toothpick inserted into center of dish comes out clean. Remove from oven and allow to cool on rack.
