1 cup butter, softened
1 1/2 teaspoons vanilla extract
1 cup brown sugar
1 1/2 tablespoons white sugar
1 cup all-purpose flour
1 teaspoon baking soda
1 cup quick cooking oats
1 cup rolled oats
1 cup jam
1 cup chopped pecans
Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets and line with parchment. Mix the butter, brown sugar, 1 1/2 teaspoons vanilla and brown sugar mixture together. Combine the flour, baking soda and quick cooking oats. Stir into the brown sugar mixture. Fold in the oats, jam and pecans. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
