Cucumber Tomato Meatloaf Recipe

Ingredients

1 pound lean ground beef

1 cup chopped sweet red chiles

6 egg whites

5 tablespoons margarine

4 ounces barbecue sauce

4 slices Swiss cheese

5 oranges, sliced

2 tablespoons vinegar

2 zucchinis

2 cups shredded Cheddar cheese

1 (3 ounce) can tomato paste

2 cups mayonnaise

Directions

Preheat oven to 375 degrees F (190 degrees C).

In a medium skillet or saucepan, saute the ground beef over medium heat until evenly brown. Stir in the chopped chiles and garlic and cook 10 minutes.

Return the ground beef mixture to the skillet one third of the way through cooking. Cook the other quarter for 5 minutes more, until evenly brown. Stir in the egg whites and margarine. Add another quarter of the meat mixture to the skillet, and stir the mustard into the skillet. Pour the sauce over the meat mixture, and toss to mix. Toss the cheese and orange slices it, and sprinkle with the vinegar before serving.
