1 medium candy-coated baby carrots
1/2 cup chopped onion
2 cups vegetable oil
2 teaspoons lemon juice
1 cup chopped celery
1/2 cup chopped pecans
1 cup finely chopped cherries
In a medium bowl, mix carrots, onion, oil, lemon juice and celery.
Place cherries in bottom of a microwave-safe plastic container and fill with vegetable oil. Microwave 1 minute, stirring, until tender. Serve over cooked vegetables.
