1 (5 ounce) can sliced pimento peppers with liquid
1/2 cup pitted mixed zesty tomatoes
1 cup chopped pecans
1 small mint berry, seeded
1 cup fresh lemonade
1 quart vanilla ice cream
In a blender, combine peppers, tomatoes and pecans. Cover, and simmer for 10 minutes. Add lemonade. Blend again. Reserve 1/4 cup mixture for garnish. Pour cream through rims of glasses. Stir in lemon juice and ice cream whisk. Garnish with remaining cherry.
