Egg Pancakes Recipe

Ingredients

1 egg

1 cup vegetable oil

1 cup white sugar

1/2 teaspoon salt

1 tablespoon distilled white vinegar

1/3 teaspoon baking soda

1 cup rolled oats

1 cup chopped pecans

1/2 cup margarine, melted

1 (8 ounce) package cream cheese, softened

1 teaspoon vanilla extract

1/4 teaspoon salt

1 tablespoon cornstarch

1 cup crushed cornflakes cereal

1/4 cup butter

1 cup confectioners' sugar

Directions

In a medium bowl, beat egg, vegetable oil, brown sugar, salt, vinegar, baking soda, oats, pecans, margarine, cream cheese and vanilla until well blended. Stir into egg mixture until just combined. Mix in crushed cornstarch, crushed cornflakes cereal, melted butter and confectioners' sugar until well blended. Stir into egg mixture until well blended. Pour into prepared muffin cups.

Bake in preheated oven for 30 to 35 minutes, until golden brown. Cool muffins on wire rack. Serve warm with toothpicks or plastic wrap.
