1 (18.75 ounce) package brownie mix
1 (3.5 ounce) package instant vanilla pudding mix
1/2 cup boiling water
2 eggs, beaten
2 cups vegetable oil
1/2 cup milk
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups egg whites
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round pans.
In a large bowl, mix brownie mix, pudding mix and boiling water. Beat until smooth.
In a small bowl, beat egg whites until stiff. Mix in the flour, baking powder and salt. Stir in the milk, egg whites and pecans. Pour batter into prepared pans.
Bake in preheated oven for 50 to 60 minutes, or until a toothpick inserted into center of the cake comes out clean. Check with a wooden toothpick several times while baking and turning. During the last 15 minutes of the baking, allow to cool completely before filling.
