2 (8 ounce) packages cream cheese, softened
1/2 cup white sugar
1 egg
1 teaspoon vanilla extract
3/4 cup pumpkin puree
1 cup chopped pecans
1 (8 ounce) package cream cheese, softened
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) round pie pans. In a large bowl, cream together cream cheese and sugar. Beat in egg and vanilla until smooth. Beat in pumpkin, pecans and 1/2 cup chopped pecans. Pour batter into prepared pans.
Bake in preheated oven until pie is tender in center, about 40 minutes. Cool completely before cutting into 4 squares. Serve warm or cold.
