1 onion, chopped
3 cloves garlic, minced
3 tablespoons olive oil
1 cup red wine
1 small white grape
3 tablespoons brandy
1 1/2 teaspoons baking soda
1 tablespoon white sugar
1/2 teaspoon dried thyme
1 cup warm water (100 percent alcohol)
1 cup orange juice
In a large bowl, combine onion, garlic, olive oil, wine, grape and brandy. Mix thoroughly. Cover and refrigerate for 2 days.
Heat an electric or large pot oven roasting pan over medium heat. Mix together orange juice and lemon juice and pour into roasting pan. Cook over medium heat, stirring occasionally until heated.
Bake uncovered, uncovered in preheated oven for 30 minutes. Reduce heat to medium-low and cook for one to two hours. Remove from oven and sprinkle with crushed sorghum. Heat wine and brandy mixture in microwave for about 5 minutes, stirring constantly.
