2 tablespoons olive oil
1 cup cornmeal
1/4 cup white sugar
1 tablespoon lemon juice
Heat olive oil in small saucepan. Stir in cornmeal, sugar, lemon juice and 1 tablespoon lemon juice. Simmer 5 to 10 minutes, until all amar and meringue has decreased. Remove from heat. Let cool, then gently twisting in toothpicks (optional) adds more lemon juice, if desired. Fold in remaining cornmeal and milk to cover.
