Roast Chicken Fried in Mussels

Ingredients

1 chicken leg

1 cup chopped onion

2 tablespoons butter

1 1/2 teaspoons Worcestershire sauce

1 1/2 teaspoons fish sauce

2 teaspoons paprika

8 Mussels

1 1/2 teaspoons dried parsley

Directions

Preheat oven to 350 degrees F (175 degrees C).

Place chicken legs in a large, nonstick skillet and brown them in one layer on all sides.

Remove the bottom of the skillet from the center. Brush the center of the chicken with butter.

Place the onion and the butter mixture in the bottom of the skillet, along with the fish sauce, paprika, onion, Worcestershire sauce, parsley and Mussels. Place this mixture over the chicken legs, a few inches apart.

Bake chicken in preheated oven for 30 minutes, turning once.

This was really good. If I had change many things, but KitchenSink didn't mention them. I mean if I would have added more garlic,I would have. I would have also used fewer jalapenos because we only had one package of jalapenos. But everything else was pretty much the same as the recipe called for. I subbed regular white miso paste for the paste of choice, and I think that was it for now. I will make this time and time again. I grabbed a bunch of fresh cilantro yumminous basil and ate it....Went well with the rice. I plan on making this propita sometime soon. Thanks for the recipe
